A pickled shrimp and watermelon salad

This recipe is perfect for summer. A pickled shrimp and watermelon salad paired with @aixrose_the_official Rose. 

It makes the perfect quick summer meal or a great addition to your summer BBQs. Loving how it is hitting all the flavors of sweet, salty, spicy and tart. It compliments the wine perfectly. 

The notes of watermelon swim together while the acidity cuts through the spice. This wine goes down easy and when paired with the salad the whole bottle disappeared a little too quickly. 
A pickled shrimp and watermelon salad


1 cup apple cider vinegar
½ cup olive oil
1 tbsp salt
1 tsp ground cumin
1 lb peeled and deveined shrimp
1 small red onion thinly sliced
1 jalapeno sliced
3 cups watermelon diced
1 lime juiced
cilantro
1: In a saucepan over medium high, add vinegar, oil, salt and cumin stir and bring to a simmer. Add shrimp, onion and jalapeno. Stir and cover. Remove from heat and let sit for 20 minutes
2: Place watermelon in a large bowl. When shrimp is done, use a slotted spoon to remove shrimp, onion, and jalapeno. Spoon over watermelon. Top with lime juice and ½ cup of reserved cooking liquid. Toss to combine. Finish off with fresh cilantro
3: Serve with a giant glass of chilled rose and take in all the summer vibes
