Best italian sausage soup recipe

Things are going to be a little different for the month of January over here. We are doing whole30, which also means we are doing dry January. 

So no pairings for the month just some delicious food. For those of you not familiar Whole30 its a 30 day reset eliminating sugar, dairy, alcohol and grains. 

The first few days of sugar and carb detox are pretty rough, especially after the holidays, but after that it’s pretty amazing how much better I sleep and feel. So for the next 30 days we will bring you recipes that are whole30 approved and just dream about the pairings we would do.

Creamy Italian sausage soup (inspired by Zappa Tuscana)
1 package compliant bacon (we used @wellshire sugar free)
1 lb compliant Italian sausage
1 onion chopped
4 cloves garlic minced
1 tsp oregano
1 32 oz container of chicken stock
2 lbs potatoes in large 1 inch cubes
1 can coconut milk
1 bunch kale torn into bite size pieces
Salt and pepper
Fresh parsley and basil to garnish.

1: in a large pot over medium cook bacon until desired crispness. Remove from pot and set aside for later. Add sausage and crumble while cooking

2: Add onion to pot cook until translucent about five minutes. Pour in chicken stock, garlic, oregano and potatoes and bring to a boil. Lower heat to medium low and simmer until potatoes are fork tender.

3: Add coconut milk and kale to pot. Stir until kale is wilted

4: paddle into bowls, top with bacon, parsley and basil, enjoy while you daydream about Chianti and sip kombucha instead.
