Easy Butter Poached Lobster Tail Recipe

What’s your favorite holiday tradition? We love doing lobster Christmas/New Years. 

Usually we will make homemade pasta, butter poach lobster, have everyone bring an assortment of seafood and toss it all together in a lemon cream sauce (see recipe below) it pairs perfectly. 

Butter Poached Lobster Recipe 

1/4 cup Butter
2 Shallots minced
2 Lemons juiced plus 1 tsp lemon zest
1 cup Chicken stock ( or seafood stock)
1/4 cup White wine
10 cloves Garlic minced
1/4 cup Heavy cream
1/4 cup Parmesan cheese

1: in a sauce on over medium high melt 3 tbsp butter. Add minced shallots and stir occasionally until they start to turn brown and translucent. Deglaze the one with wine. When half of the wine is evaporated add lemon juice, lemon zest, chicken stock and garlic. Bring to a boil then turn heat down to medium low and simmer for about ten minutes or when sauce is reduced by about 1/2.

2: add heavy cream, Parmesan cheese, and remaining 1 tbsp of butter Simmer until it coats the back of a spoon.
3 toss seafood pasta in sauce, gather all your friends and family, keep the wine flowing and have yourself a happy holiday 🦞 🎄
