Easy Champagne Vinaigrette (or marinade)

School night pairings: this salad comes together quick with a lime champagne vinegarette and paprika tortilla croutons paired with a Vino Verde from Orlana. 

Warning the bottle goes down fast. It is light, crisp, tart and slightly effervescent. This is another wine that is a bit too sweet for my taste to enjoy alone but when paired with food with a little spice and acidity it was just right! This salad uses tortillas to act in the place of croutons. 

We seasoned them olive oil, hot paprika, salt and cummin and threw them in the oven at 350 until they were nice and crispy.

While the tortillas are heating up, you can take care of all the chopping and whip up a quick homemade dressing. The whole meal will take you well under 30 minutes to come together.
Lime champagne vinegarette
Easy Champagne Vinaigrette

Juice of 2 limes
¼ cup tbsp champagne vinegar
1 tbsp honey
1 tbsp minced jalepeno
1 minced garlic clove
¼ cup olive oill
Salt
Pepper.

1: In a blender, blend together lime juice, champagne vinegar, honey, jalapeno and garlic until well combined. With blender on low, slowly drizzle in olive oil until emulsified.

2: make a giant salad with mixed greens, shredded chicken, red onion, cheddar cheese avocado, pepitas and tortilla croutons above. Drizzle with desired amount of dressing

3 kick back with a glass of Vino Verde, and think about how you rock and a balanced diet
