Easy Lamb Recipes : How cook lamb in oven

Sticking to the southern Rhône region, we broke out this wine from Domaine De Vervine. It went down so smooth I was surprised when I went to pour another glass and it was all gone. We paired this with a harissa lamb stuffed with apricot couscous. 

And they were pretty darn heavenly together. The cherry notes in the wine tackled the spice like a champ. We especially loved the Smokey finish! 

Apricot couscous
1 cup dried Israeli couscous
1 tbsp butter
1 cup water
1 tbsp olive oil
1 lemon juiced
1 four ounce container of feta cheese
1/2 cup chopped walnuts
1/4 cup chopped dried apricots
1/4 cup chopped parsley
Salt and pepper
1: in a skillet over medium high heat melt the butter. Add couscous and toast until golden brown. About five minutes. Add water and bring to a boil. Reduce heat and cover until water is absorbed about ten minutes

2 uncover and stir in the rest of the ingredients

3: serve along your favorite protein and glass of southern Rhône wine. For extra point eat on the beach
