Easy Make chicken and Chardonnay pairing

usually I tend towards the feelings of ABC but get some roasted chicken in front of me and im all about it. This chicken frencese was no exception. 

Chicken frencese is a italian america creation and it has all the makings of a great chardonnay pairing. Crispy egg battered chicken breast in a lemon butter sauce went perfectly with @joshcellars Chardonnay. Find the recipe below:

3 chicken breasts
1/2 cup plus 1 tsp corn starch
2 eggs
Salt
Pepper
3 tbsp butter divided
1 tbsp olive oil
3 garlic cloves minced
1 shallot minced
2 tbsp capers
1 cup chicken broth
1/2 cup white wine
1 tsp red pepper flakes
1 lemon juiced

1: cut chicken breast in half. Between two pieces of parchment paper pound chicken breast to 1/4 inch thickness ( i used a wine bottle but if you have a meat pounder have at it 😂) 1 in a shallow bowl place 1/2 cup corn starch. In another bowl whisk eggs and salt and pepper. in a bowl whisk together chicken stock, wine, red pepper flakes and remaining 1 tsp of cornstarch set aside. 

Working one breast at a time dip in cornstarch, shake off extra and dip into egg to coat letting the extra drip off. Place on plate in a single layer and complete with remaining chicken

3: heat 1 tbsp of butter in a large pan over medium high. When melted add three chicken breast halves and cook until golden, about 3 minutes each side. Repeat process with remain three halves. Transfer to plate to rest

4:. Add olive oil to pan, add garlic, shallots and capers. Stir until shallots translucent. Add chicken stock mixture, stir and scape up browned bits on pan. Bring to a simmer and turn heat to medium low stirring occasionally. When sauce thickened, whisk in remaining butter and lemon juice.

5: on a giant platter put roasted broccoli chicken breast and top with sauce. Pour yourself a giant glass of Chardonnay and become a chicken and chard addict.
