5 steps to an amazing roast chicken

1: brining
2: slow roast
3: killer pan sauce (see recipe below)
5: sharp knife to carve
4: the perfect wine to pair
We brined the chicken over night. Preheated the oven to 350, stuffed the chicken with lemon, garlic, herbs and a little butter. It was cooked for about 1 hour 15 minutes in a covered cast iron dutchoven (or until temp is *150) turn oven to broil and uncover for about 10-15 minute until skin is browned and crispy.
