POPULAR!! Braised Chicken Wings Recipe

I was first thinking I wanted to make Coq au vin that’s whole30 complaint and then I realized that it’s basically chicken braised in wine and there is no really good substitute for wine in a dish. The rule of no wine even for cooking is my least favorite of all the rules πŸ˜‚ but this braised chicken made me forget all of that because it’s so freaking good. This one does take a little more time but it’s worth it

6 oz bacon
3 lbs various piece of bone in chicken
Salt and pepper
8 oz pearl onions peels and halved
3 cups Cremini mushrooms quarters
2 tbsp balsamic vinegar.
2 tbsp red wine vinegar
1 6oz can tomato paste
1 32 oz container chicken broth
4 sprigs of thyme

1: in a ditch oven over medium high cook bacon. Remove and place aside. Pat chicken dry and season with salt and pepper. Cooking in batches brown chicken on both sides about 4 minutes per side. Remove from pot. Add onions and mushrooms. Stir occasionally until onions translucent and soft.
2: add vinegars, tomato paste, chicken stock and thyme. Bring to a boil and reduce heat to a simmer. Add chicken. Cover and cook for 30 minutes, or until chicken is done.

3: when chicken is done, remove from pot. Add in bacon. Make a slurry paste with potato starch and water. Pour into pot. Simmer sauce until starts to thicken. Remove thyme sprigs from the sauce

4: Pour sauce over chicken serve with roasted veggies.
