Russian Dressing recipe

Comfort food may not always look the prettiest but it sure is tasty. This is a play on the rachel sandwich, but instead of sandwiching everything between two piece of rye bread, we loaded up a potato pancake with all the goodness!

Potato pancake: 2 spiralized potatoes ( rinsed and patted dry) form two patties and fry in 1/4 cup of canola oil. Fry for 7 minutes, flip and fry for 7 minutes. Cool on wire rack.
Place 2 slices of swiss cheese to each rosti
When cooled top with 1 oz of slice pastrami, sliced pickles, green onion and russian style dressing.

Russian dressing
1 egg
2/3 cup avocado oil
1 tbsp dijon mustard
1 tbsp lemon juice
3 tsp parsley
2 tbsp ketchup
1 tbsp red wine vinegar
1 tsp minced garlic
1 tsp paprika
1/2 tbsp Tabasco
2 tbsp capers

Place all ingredients except oil in food processor, blend until smooth and slowly incorporate oil until emulsified. Chill until ready to use. 🍷

The Rachel rosti paired amazing with @pikeroadwines pinot noir. 

The Xander Taryn Vineyard pinot is full bodied with notes on cranberries, spice and cherry with some earthy undertones. It is low in tannins, which pairs well with the salty and highly spiced pastrami. Perfect way to warm up at the end of a chilly day!
