New whole30 breakfast obsesssion. Stuffed breakfast baked potatoes. I prep a few baked potatoes and then in the morning just make all the other ingredients fresh. It’s so filling and satisfying!

4 potatoes
Olive oil
1 tbsp avocado oil
2 cups arugula
4 chicken sausages sliced
1 cup Cherry tomatoes chopped
Ranch dressing

1: preheat oven to 350. Rub potatoes with olive oil and sprinkle with salt. Prick the potatoes with a fork

2 place potatoes directly on the oven rack and cook for 45-60 minutes until skin is crispy

3: Split open each potato and top each with a handful of arugula. in a small skillet heat up avocado oil over medium and brown sausage on each side. Top arugula with sasauge.

4 in the same skillet add eggs and fry until desired doneness. Place one egg on each potato. Top with tomatoes and ranch.

5: pair with almond latte and start your day off right 🤤
