The Best Recipes to Pair with Sauvignon Blanc

Its Wine Wednesday. What are you sipping on. We are continuously trying new wines and pairings at our house. Tomatillos and Sauv blanc are my new favorite pairing.

This sauv blanc is a classic example of New Zealand Sauv Blanc with citrus and grass notes

6 scallops
6 shrimp de shelled
3 lemon
3 limes
1/2 lb tomatillos
1/2 tbsp fresh oregano
2 habaneros stemmed and seeded
3 cloves garlic
4 tbsp olive oil
1 radish

Cilantro for garnish

1: put tomatillos in blender until smooth about 1 minute. Put mixture through fine mesh sieve and return liquid to blender, add habaneros and oregano in blender blend for 15 seconds. Set aside

2 heat oil in pan, add cloves of garlic, sauté garlic until golden brown. Add scallops to pan. Leave until good sear on one side remove from heat. Add oil to tomatillo mixture and refrigerate.

3: Boil water in pan, add shrimp for 3 minutes. Remove from water and run under cold water. Cut shrimp into piece. Add shrimp to shallow pan with scallop sear side up. Juice lemons and limes until reaches half way up scallop and covers shrimp pieces. Chill for 30 minutes.

4: Remove seafood from citrus. Arrange in two shallow bowls, add tomatillo mixture. Top with shaved radishes and cilantro
5 enjoy with a big glass of New Zealand Sauvignon Blanc
