I always wanted to make boneless skinless chicken breast on the stove top using skillet or pan, that kept the flavor in versus grilling chicken in drying it out.

After much trial and error I came up with this boneless skinless chicken breast baste with butter and topped with an all seasoning that almost everybody would love.For many years it was a dish I would would make for myself, my wife and guest when we would have company over. It is a great poetry dish to go with vegetables and another side.



I have finally decided to post this recipe after much demand from guest on how it is made.

As you can see it is quite a simple dish that is very tasty and loved.

Alida’s Grilled Boneless Chicken Breasts

Tip: For thicker breasts, you may need to close the lid for 5 minutes or so to cook them all of the way through.

Ingredients
4 servings
6 Boneless/skinless chicken breasts
1 cup Greek yogurt
1 tbsp lime zest
1 tbsp lime juice
1 Serrano pepper minced
2 garlic cloves minced
1 tbsp Cumin
1 tsp Paprika
1 tsp Salt

Steps

  1. Rinse the chicken breasts under cold running water and then blot dry with paper towels
  2. Combine next seven ingredients
  3. Put breasts in shallow glass baking dish and cover with the yogurt mixture
  4. Marinade chicken in mixture for at least 30 minutes
  5. Heat grill to high, clean the grates before they get too hot and oil the grates
  6. Place the breasts on the hottest part of the grill and don’t touch them for about 2 – 3 minutes

Grill:

Rotate breasts 45 degrees to create some grill marks; Grill for an additional 2 to 4 minutes and turn them over; Grill for 2 more minutes and then rotate again 45 degrees to make those grill marks; Continue grilling for another 2 to 4 minutes. Check the internal temperature with an instant-read thermometer (Target temp is 160 degrees)

Remove the chicken breasts from the grill and place on a plate.

Pastrami stuffed boneless chicken breasts




Ingredients

2 servings
  1. 2 boneless chicken breasts
  2. 150 grams pastirma (dried meat)
  3. 1 chopped onion
  4. 1 chopped tomato
  5. 1 chopped green pepper
  6. 2 pinch salt
  7. 1 pinch curry powder
  8. 1 pinch black pepper
  9. 1/2 lemon

Steps

  1. Rinse the chicken breasts very well and open a whole in them wth a sharp knife. Be carful not to open them completely.

  2. Cut the pastrami into very small pieces.

  3. Mix the pastrami with all the other ingedients and spices . Make sure that the chopped tomatoes, onions, and pepper are relatively small too.

  4. Stuff theses ingredients inside the chicken breasts.
  5. Add some curry powder on top to have some oriental flavor.
  6. Put it in the oven or on a grill for about 20 -35 minutes.
  7. Served hot with Rice, Pasta, or bread.

Seasoned, buttered boneless skinless chicken breast.


Ingredients

 3 servings
  1. 3 piece chicken breasts
  2. seasoned salt
  3. 2/3 cup soft butter

Steps

  1. Heat pan to low, so butter can melt.

  2. Use basting tool to base butter on chicken

  3. Make sure you keep a small layer of butter in the bottom of the pan for continuous coating.
  4. Fit in and coat as many pieces of chicken breast you can.

  5. Keep a layer of butter in the bottom of the pan for you to use for continuous coating
  6. Turn to medium heat and cook for 10 minutes before adding seasoning
  7. You may want to use a splatter screen to keep butter from jumping out of the pan

  8. After the first 10 minutes of cooking flip chicken in based.

  9. chicken for another 5 minutes
  10. remove from heat, flip, and based.

  11. Top each piece with all seasonings evenly and cook for 2 minutes, flip and baste with butter and cook again for 2 minutes.

  12. Make sure to baste chicken once more before or after pulling them Out of the pan.
